Here goes my favourite recipe for a warm salad. It's calcium-rich, thanks to the sesame, and very satisfying. Its perfect for people on a diet or on detox, as this salad fills you up. You can add your choice of vegetables. You can also include any boiled grains like barley, couscous or millets to make it a meal in itself.
SERVES 2
INGREDIENTS
1 cup mixed lettuce
¼ cup mixed bell peppers
¼ cup mushrooms
4-5 asparagus
1 carrot
4-5 baby corn
Salt to taste
¼ tsp pepper
1 tsp oregano
2 tbsp extra virgin olive oil
2 tbsp feta cheese
Dressing:
¼ cup tahini or white sesame paste
Juice of 1 lemon
2-3 garlic cloves
Salt to taste
a dash of pepper
½ tsp cumin powder,
¼ tsp red chilli powder
2-3 tbsp water (for thinning)
METHOD
Tear mixed lettuce leaves into pieces. You can add as many varieties as you want or even 1 type.
Thinly slice your choice of veggies like bell peppers, mushrooms, asparagus, carrot, baby corn.
Coat vegetables in salt, pepper, oregano and olive oil. Lay them flat in an oven tray and bake them for 15-20 min until roasted.
Lay them on the lettuce. Top with feta cheese or skip if vegan. You can even use other toppings like walnuts, pine nuts or any seeds.
Whisk all dressing ingredients. Serve the dressing in small blobs randomly over the veggies or serve on the side.
*This dressing remains in the fridge for 3-4 days.
