Ingredients
• Masaman Curry Paste
• Roasted Peanuts- ¼ cup
• Spring Onion Greens- 1, finely chopped
• Garlic Cloves- 2
• Tamarind Paste- 1 tsp
• Dry Red Chillies- 2
• Ginger- 1 inch
• Stalk Lemon Grass- 1, chopped
• Coriander Seeds- 1 tsp
• Cumin Seeds- 1 tsp
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 𝗳𝗼𝗿 𝗠𝗮𝘀𝗮𝗺𝗮𝗻 𝗖𝘂𝗿𝗿𝘆
• Coconut Milk- 3 cups
• Tofu- 200 grams
• Mixed Veggies (bell peppers, carrot, broccoli, zucchini)- 1 cup
• Brown Sugar- 2 tsp
• Salt- as per taste
Method
• Add all the ingredients for the Curry Paste into a mixie & make a smooth paste by adding just a little water.
• Now heat a teaspoon of oil in a heavy-bottomed saucepan.
• Add the veggies into it, sprinkle some salt.
• Stir fry the veggies until partially cooked.
• Then, add the curry paste, the coconut milk, 1 cup of water, tofu, brown sugar, & salt to taste.
• Stir all the ingredients & bring them to a brisk boil for 3-4 mins.
• Adjust the consistency of the curry by adding more water if required.
• Check the salt & spice levels. Adjust them to suit your taste.
• Transfer the curry to a serving bowl.
• Top with roasted peanuts, a lemon wedge, & boiled rice noodles.
• Thai Massaman Curry is ready to serve!
