Here's a quick salad to whip up when u have guests over and not too many ingredients at home. This salad/snack is a quirky appetizer in terms of its presentation, and unique in its simplicity. The taste of the roasted corn with the tartness of fresh tomato elevates this simple dish.
SERVES 4
INGREDIENTS
1 American corn
Salt to taste
1 tsp red chilli powder
Juice of 1 lime
2 tbsp coriander leaves chopped
4 tomatoes, halved and deseeded
METHOD
Roast the corn on direct flame until charred on all sides. Then carefully cut the kernels from top to bottom with a slicing motion of the knife.
Mix in the salt, chili powder, lime juice and coriander with the corn kernels. Stuff about a tablespoon of this salad into each half of the tomatoes.
Serve garnished with jalapenos or spring onion greens. You can even chill in the fridge and serve cold.
