ROOT VEGETABLE TRAY BAKE | Healthy Veg Recipe | Tray Bake Recipes

Root vegetables are one of the important sources of Prebiotics, which are crucial for gut health. Having a balance of Prebiotics and probiotics daily is a must for overall wellness.

Meanwhile here is an easy nutrient-dense recipe to try!



INGREDIENTS

• 1/2 Cup each Root Vegetable like Carrot, Beetroot, Sweet Potato, Colocasia (arbi)

• 4-5 Garlic Cloves Whole

• Salt and Pepper to Taste

• 2 tbsp Olive Oil

• Few Sprigs of Thyme or Rosemary Fresh

• For the Dressing

• 2 tbsp Pesto or Chimichurri Sauce (refer to my earlier posts for the recipe)

• 1/2 cup of Cooked Millet or Quinoa


METHOD

• Chop all root vegetables into dice.

• Take in a bowl, sprinkle salt and pepper and olive oil, and massage to coat.

• Preheat the oven to 180°C.

• Line an oven tray with a silicone mat or parchment paper.

• Lay the veggies without overlapping and top with the herbs.

• Bake in the oven for 25-30 min or until the veggies or fully cooked and beginning to roast.

• Take out from the oven, top with the cooked grains and sauce of your choice, and serve warm.


This warm tray bake is an excellent salad for the monsoons and the upcoming winter.
