Some days u just want to detox after a week of bingeing. I can never go on a diet, and even if I try, I can never stick to it. But if the diet food is tasty, then why not! Here is a regular meal of sauteed vegetables, but #gourmetised up.
SERVES 2
INGREDIENTS
1 cup vegetables of your choice - I used mushrooms, carrots, broccoli, bell peppers, onions and zucchini
1-2 tbsp olive oil
Salt to taste
Pepper to taste
6-7 sprigs of fresh thyme
Dip:
1 onion finely chopped
4-5 cloves of garlic chopped
1 head of cauliflower
½ cup milk
METHOD
First, roast all the veggies in a preheated oven with olive oil, salt, pepper and fresh thyme leaves.
In a pan, saute the onions and garlic until they are light brown. Boil cauliflower florets with some thyme until they are tender. Now, grind the florets with the onion and garlic, add salt and pepper and milk for consistency.
Sprinkle some chilli flakes if you want to make it spicy.
Serve warm.
*This is quite an unusual puree, quite like a mashed potato, but without the calories. The nutritional value is high, and so, worth including on a detox or weight-loss diet.
*You can also roast the cauliflower to make the puree. It will add a smoky flavour to the dip.
