PIZZA CALZONE

Calzone is a traditional Italian dish, and is another form of pizza. Calzone is nothing but a half-moon shaped pizza or a folded pizza. You can use a variety of stuffings, I have made a mixed veggie one here. Calzone can be either baked or deep fried. Serve it with pizza sauce or ketchup and you're good to go. the version I have made here is without yeast. It takes about 1-1.5 hours from start to finish, including resting time. If you have yeast pizza dough, you can use that as well.




SERVES 12


INGREDIENTS

For the dough:

2 cups whole wheat flour

1 tsp baking powder

1 tsp salt

1 tbsp butter

2-3 tbsp olive oil

½ cup cold water (or as per dough)

1 tbsp oil for brushing

For the filling:

1 small onion chopped

4-5 cloves garlic minced

½ bellpepper chopped (any colour)

1 cup mixed chopped veggies like carrot, corn, potato, peas (boiled)

salt and pepper to taste

1 tbsp oregano

1 tbsp chilli flakes

3 tbsp tomato sauce

1 cube cheese grated

1 cube mozzarella cheese chopped

1 tbsp olive oil


METHOD

  1. Take the flour in a big bowl. Add salt and baking powder and mix. Add the butter and oil and mix with your fingers.

  2. Now add the cold water little by little and bind into a smooth dough. You don't need to knead.

  3. Cover with a kitchen towel and set aside for 30 min.

  4. To prepare the filling, heat a pan and pour olive oil. Add the garlic and cook. Now add the onions and cook until they are transparent.

  5. Next, add the bell peppers and cook for a min.

  6. Add the boiled veggies and all the seasonings and sauce and mix well.

  7. Lastly add both the cheese and combine. The reason why we add both cheese, grated and chopped, is that it adds texture to the filling and also gives it the gooeyness. If you want to make it healthy, leave off the cheese. Switch off the gas.

  8. Roll out the dough into 5" rounds (you can make whatever size you like). Place a big spoon of filling along one half. Put little water around all the edges. Fold one half over the other in a semi-circle. Be careful not to leave air around the filling.

  9. Seal the edges by pressing with your fingers. Make fork marks all along the edges.

  10. Make a small cross on top of the calzone, so that steam can release from the filling while cooking.

  11. Brush both sides lightly with oil and place on a parchment paper or silicon mat.

  12. Bake in a preheated oven for 15 min in 200 deg C, until golden.

  13. Once baked, take it out and brush with oil or butter again very lightly for the glossiness. This step is optional.

  14. Serve hot with pizza sauce or ketchup or as is.
