Potatoes are my go to vegetable whenever I have to make a starter. There is no one I am sure who doesn't like a good potato snack. There are so many ways you can treat a potato. Boiled, mashed, grilled, roasted, fried - every single technique is good for elevating its taste. My favourite, as expected, happens to be roasted.
This marinade was born of the need to finish various bottles in my fridge! I tweaked it over the years, and it remains a family favourite.
SERVES 6
INGREDIENTS
500 gm baby potatoes parboiled with skin
2 tbsp soya sauce
2 tbsp chilli garlic or Sriracha sauce
2 tbsp honey
Salt and pepper to taste
1 tsp mixed herbs (I used a mix of oregano, basil, rosemary, thyme)
1 tsp chilli flakes
2 tbsp sesame seeds
¼ cup peanuts roasted and coarsely crushed
Spring onion greens to garnish
Mix the marinade ingredients, reserving a handful of peanuts.
Toss the parboiled potatoes in the marinade and keep aside for half an hour.
Preheat the oven to 180°C. Lay the potatoes on the oven tray and bake with both rods for 30-40 min, or until roasted.
Serve hot, topped with the remaining peanuts and spring onion greens.
This marinade is a perfect balance of sweet, spicy and tangy. You can tweak it according to your palate. Don't skip the usage of honey though.
*The marinade might be sticky, don't worry, it's because of the presence of honey. And it lends an excellent flavour and texture to the potatoes.
