MULTI SEED CRACKERS

These multi seed crackers are so versatile! You can use these crackers as a base for any dips like hummus, guacamole or chutneys. You can also crumble them up and use as a topping on your salads or muesli. They are healthy, vegan, gluten free and packed with nutrition! You can amp them up with any spices like peri peri, Italian seasoning or just cumin powder. I have kept it simple here, coz I love eating them plain with my cuppa tea.





SERVES 20 pieces


INGREDIENTS

½ cup melon seeds

½ cup pumpkin seeds

½ cup sunflower seeds

¼ cup chia seeds

¼ cup basil seeds

¼ flax seeds

¾ cup water

1 tsp rock salt

1 tsp jaggery or brown sugar

1 tsp coconut oil


METHOD

  1. Mix all the ingredients together well and leave it for 15-20 min until the chia and basil swell up and become gelatinous.

  2. Meanwhile preheat the oven to 170°C. Line the oven tray with baking paper.

  3. Now lay this mixture flat and even on the paper, taking care to spread it thin. Bake for 20 min.

  4. Take out from oven and cut them in pieces using a pizza cutter or you can also cut evenly into big shards with your fingers.

  5. Bake these pieces again for 15 min until they are crisp and the seeds start turning brown.

  6. Take off from oven and cool completely. Store in an airtight container.

* You can use any mix of seeds that you have. Make sure you don't skip the chia seeds. You can substitute the basil seeds with equal quantity of chia seeds. The other seeds can be any combination.
