INGREDIENTS
• 1/2 Cup Sooji or Semolina
• 1/2 Cup Besan or Chickpea Flour
• 3/4 Cup Finely Chopped Mixed Veggies like Onion, Bell Peppers, Carrots, Deseeded Tomatoes, Zucchini, Corn, etc
• Black Salt to Taste
• Pepper to Taste
• 1 tbsp Chilli Flakes
• 1 tbsp Mixed Herbs Seasoning
• 1 tbsp Tomato or Pizza Sauce
• 1 tsp Baking Powder
• 1/4 tsp Baking Soda
• 3/4 Cup Whisked Curd
• Water as Needed
• 1 tbsp Olive Oil
• 1/4 Cup Grated Cheese (optional)
METHOD
• Mix the wet ingredients.
• In another bowl, combine both the flour, baking powder, and soda.
• Now mix all the veggies and seasonings with the dry ingredients.
• Slowly add the wet ingredients and combine.
• Add water as desired to get a thick pouring consistency.
• Preheat the oven for 15 min to 175 deg C.
• Pour the batter to 3/4 quantity in muffin/ cupcake molds.
• Top with cheese if using.
• Make sure you grease them before pouring so that you can take them out easily.
• Set the mold inside the oven in the middle rack to bake for 20-25 min or until a toothpick comes out clean.
• Serve hot with tomato sauce or coriander chutney.
