Dhansak is a traditional Parsi dish comprising of a dal preparation, rice and served with kachumbar salad on the side. The word "Dhansak" comes from the words "Dhan" and "Sak" which means, a medley of Dals and vegetables.
SERVES 4
INGREDIENTS (For the Pressure Cooker)
• 1/4 Cup Each Yellow Masoor, Black Dal, Tur Dal, and Split Lentil Dal
• 1 Cup Mixed Chopped Vegetables like Potato, Bottle Gourd, Beans, Carrot
• 1 Cup Mixed Greens like Spinach, Fenugreek, Coriander
• Salt to taste
• 1/2 tsp Turmeric Powder
FOR THE TEMPERING
• 1 Onion Chopped
• 1 Tomato Chopped
• 2 tbsp Ghee
• 1 tbsp Ginger Garlic Green Chili Paste
• 2 tbsp Jaggery
• 3 tbsp Tamarind Paste
• 1 tsp Red Chilli Powder
• 1 tsp Cumin Powder
•2 tsp Coriander Powder
• 1 tbsp Dhansak Masala or Garam Masala
• Salt to taste
METHOD
• Mix all the ingredients of the pressure cooker with enough water and cook until the dal and vegetables are soft.
• Roughly blend with the hand mixer.
• In a kadai, heat the ghee.
• Saute the onions until pink and then add the paste.
• Once the raw smell goes away, add the tomatoes and cook until soft.
• Add all the other ingredients and the blended dal and cook until it comes to a boil.
• Serve with jeera rice and kachumbar on the side.
