โข 1 cup Rice Flour
โข 1 tbsp Corn Starch
โข 2 tbsp Whole Wheat Flour (optional)
โข Salt to taste
โข 1/8 tsp Turmeric Powder
โข 1 cup Coconut Milk
โข 3/4-1 cup Water

โข 1/4 cup Tofu finely cubed
โข 1/4 cup Sprouts ( alfalfa/ bean/ green gram)
โข 1/2 cup Thinly Sliced Veggies like Bell Peppers, Carrots, Onions, Spring Onions, Cucumber, Roasted Mushrooms
โข 1/2 cup Iceberg Lettuce
โข 2 tbsp each Coriander and Mint

โข 3 tbsp Light Soy Sauce
โข 1 tbsp Vinegar
โข 1 tbsp Brown Sugar/Raw Sugar/Cane Sugar
โข 1 tbsp Sriracha Sauce or Red Chilli Sauce
โข 1/2 tbsp Peanut Butter

โข Mix the ingredients for the batter into a very thin pouring consistency.
โข Keep it aside for at least 30 min.
โข Whisk well the ingredients of the sauce.
โข Mix the tofu and sprouts and keep them aside.
โข Add a tbsp of the dressing to the mixed veggies.
โข In a non-stick pan, sprinkle the tofu sprout mixture all around and cook for 30 sec.
โข Then pour the batter with a small cup, taking care not to overlap. Fill the gaps as well.
โข Cover with lid and let it cook for 2-3 min.
โข Once brown spots start appearing at the bottom, place the lettuce and herbs on one half of the crepe.
โข Then add the veggies over the greens.
โข Now lift the other half of the crepe and cover the filling.
โข Serve it with the sauce and the lettuce and remaining veggies like a salad.
