As any festival comes, my body starts reminding me of my Indian mithai cravings, lol! But since I set off on this healthy path, it's harder to resist. It leaves me no choice but to experiment with flavour combinations and making those sweets guilt free.
So here's my take on the coconut barfi. Obviously it's not the same as the original, given I haven't added a drop of desi ghee. But nevertheless, I hope u like and do try this #gourmetised version. I always take it as a win if my kids like it!
SERVES 5-6 BALLS
INGREDIENTS
1 cup grated fresh coconut
5 soaked dates (overnight)
2 tbsp almonds
3-4 black peppercorns crushed
A pinch of cardamom and saffron strands
METHOD
First, roast the almonds and cut them coarsely.
Next, lightly roast the coconut until it starts to brown. Cool.
Drain the soaked dates and blend into a paste with very little fresh water. Add this paste into the coconut along with all other ingredients.
Roll them into small balls. You can store them in an airtight container for a week.
