GUACAMOLE

Some of you were asking for a guacamole recipe... and so, here it is! It's seriously easy and can be whipped up in a jiffy. The only thing you need to be careful of is the ripeness of the avocado. Like Goldilocks, it should be not too firm and not too soft, but just right.



SERVES 1 BOWL


INGREDIENTS

1 firm avocado

1 tbsp juice

Salt to taste

1 green chilli deseeded and chopped

4-5 cloves minced garlic

2 tbsp onion, finely chopped

2 tbsp tomato, finely chopped

¼ cup coriander, chopped


METHOD

  1. Cut the avocado in half, remove the big seed, and scoop out the flesh from both shells with a spoon.

  2. Mash the avocado with the back of a spoon or a fork, but make sure to leave it chunky.

  3. Next add lemon juice. Lemon juice also prevents it from browning so make sure you add it asap.

  4. Add salt, green chilli (you can also add finely chopped jalapeno), minced garlic, finely chopped onion and tomato, and mix in a handful of chopped coriander.

Use it with nachos as a dip, as a spread on toasts, in a wrap with sautéed veggies or, like me, eat it by the spoon as is! Here's another idea. Cut a tomato in half, deseed it and fill it up with guacamole. Isn't that innovative?
