Berry Mediterranean Salad Recipe | Vegan Salad At Home

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀

1 cup mixed lettuce

½ cup mixed veggies like tomatoes, cucumbers, bell peppers, zucchini diced

¼ cup berries like blueberry, strawberry, raspberry, blackberry

2 tbsp pumpkin seeds


𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 𝗳𝗼𝗿 𝘁𝗵𝗲 𝗗𝗿𝗲𝘀𝘀𝗶𝗻𝗴

½ cup vegan curd whisked

1 tbsp tahini

½ tsp cumin powder

¼ tsp chilli powder

4-5 cloves, garlic minced

Salt and pepper to taste

½ lemon juice


𝗠𝗲𝘁𝗵𝗼𝗱

Mix all the ingredients of the dressing well.

You can store it in an airtight jar for up to 3-4 days.

Arrange all the salad ingredients on a plate.

Top with dollops of the dressing and serve.
