Nachos are synonymous with Mexican cuisine. They are, in other words, chips made with tortillas - either baked or fried. Nachos can be made as simple as served with a cheesy dip or salsa; or as loaded as layers of yummy, melty, tangy, spicy toppings. In this recipe, I am sharing nacho chips that you can make from scratch, and they are healthy as well!
SERVES 1 BIG BOWL
INGREDIENTS
1 cup makki aata or maize flour
¼ cup whole wheat flour
¾ cup water
⅛ tsp baking soda
salt to taste
a pinch of red chilli powder
¼ tsp taco seasoning or all purpose seasoning
oil for brushing
METHOD
Heat the water in a pan. Once it comes to a boil, add the baking soda in it.
Now add the maize flour and switch off the gas. Mix well.
Take off from flame and cover and leave this coarse dough mixture for 10 min.
Meanwhile mix the seasonings with the whole wheat flour.
After 10 min, knead the flour mixture with the dough and continue to knead until the dough is soft and smooth.
Keep the dough covered all the time and make small balls and keep ready.
Roll out each ball into a very thin round. If its getting difficult, you can place the ball between 2 butter paper/ parchment or cling wrap sheets.
Make triangles with a knife and prick tiny holes all over with the help of a fork.
Transfer these onto a baking tray and lightly brush with oil.
Bake in a preheated oven in 180 deg C for 7-8 min or until the edges curl up.
Let it cool completely so that the chips can crisp up.
Serve with any dip of your choice.
